Asian Meats Recipes - Burma Golden Pork Recipe
Ingredients

3 onions, finely
chopped
-
12 garlic cloves,
crushed
-
1 cup fresh green
ginger, peeled and chopped
-
3 lb. lean pork,
cubed
-
salt
-
2 Tbs. vinegar
-
1/4
cup vegetable oil
-
1 tsp. hot chili
powder
Serves
6-8
Method:
-
Put the onions,
garlic and ginger into a blender and blend to a
paste. Put the paste into a strainer or
cheesecloth and squeeze gently over a bowl to
extract as much juice as possible.

Put the liquid
into a large saucepan with the pork, salt,
vinegar, oil and chili powder and bring to the
boil.

Cover, reduce the
heat to low and simmer the pork for 2 hours, or
until it is very tender. (You may have to add a
tablespoon or two of water during the cooking
period if the mixture becomes too dry.)

The dish should
be 'golden' at the end of cooking, as the
translation of its name suggests.
