Asian Meats Recipes - Indonesian Beef and Coconut Patties (Rempah)  Recipe

Ingredients

  • 1 cup shredded coconut

  • 8 oz ground beef

  • 1 garlic cloves, crushed

  • 1/4 tsp blachan (dried shrimp paste)

  • 1 tsp ground coriander

  • 1/2 tsp ground cumin

  • 1/4 tsp laos powder or ground ginger

  • 1 egg, lightly beaten

  • 1/2 cup cornstarch

  • 1/2 cup peanut oil

Serves 6-8


Method:

  1. Put the coconut into a bowl and moisten with about 4 tablespoons of boiling water. Then stir in  all the remaining, except the corn flour and oil and beat until they are smooth and well blended.

  2. Using your hands, shape the mixture into about 12 small patty shapes. dip each shape into the corn flour, shaking off any excess.

  3. Heat about half the oil in a large frying pan. When it is very hot, add half the patties and fry for about 5 minutes on each side, or until they are cooked through and golden.

  4. Remove from heat and drain on kitchen towels. Keep the rempah hot while you cook the remaining batch of patties in the same way.
