Asian Meats Recipes - Indonesian Beef Sate

Ingredients

1 Tbs. coriander
seeds
-
2 garlic cloves
-
2 green chilies
-
1 tsp. turmeric
-
1 in. piece of
fresh green ginger, peeled
-
2 medium onions,
chopped
-
2 Tbs. lemon
juice
-
1 Tbs. soy sauce
-
4 Tbs. peanut oil
-
1 1/2 lb.
rump steak, cubed
-
1 cup thick
coconut milk
-
1/2
cup water
-
1 curry or bay
leaf

Method:
-
Put the
coriander, garlic, chilies, turmeric, ginger,
onions, lemon juice and soy sauce into a blender
and blend to a smooth puree. Alternatively,
pound the ingredients in a mortar with a pestle
until they are smooth.

Heat the oil in a
large saucepan. When it is hot, add the spice
paste and fry for 5 minutes, stirring
constantly. Add the meat cubes, and remaining
ingredients and bring to the boil.

Reduce the heat
to low and simmer for 40 to 45 minutes, or until
the meat is cooked through and the sauce is very
thick. Set aside until the meat is cool enough
to handle, then transfer the meat to a plate.

Remove the curry
or bay leaf and keep the sauce warm. Preheat the
grill (broiler) to high. Thread the cubes on to
skewers and arrange on the rack of the grill
(broiler).

Grill (broil) the
meat for 5 minutes on each side, or until it is
golden brown, basting frequently with the sauce.

Pile the skewers
on to a warmed serving platter and serve with
the remaining sauce.
