Ingredients

2 Tbs. tamarind
-
1/2 cup boiling
water

1 cup groundnut
oil
-
2 medium onions,
thinly sliced
-
3 garlic cloves,
crushed
-
1 1/2 in.
piece of fresh green ginger, peeled and finely
chopped
-
3 cloves, crushed
-
1 tsp.
grated nutmeg or
garam masala
-
1
tsp. black pepper
-
2lb. chuck steak,
cut into 1 1/2 in. pieces

1 tsp. salt
-
2 tsp. soft brown
sugar mixed with 1 Tbs. molasses and 2 Tbs. dark
soy sauce

Method:
-
Put the tamarind
into a bowl and pour over the water. Set aside
until it is cool. Pour the contents of the bowl
through a strainer into a bowl, pressing as much
of the pulp through as possible. Set aside the
liquid.

Heat the oil in a
large deep frying-pan. When it is hot, add the
onions and fry, stirring occasionally, until
they are soft.

Add the garlic,
ginger, spices and pepper and fry for 3 minutes,
stirring frequently. Add the meat and increase
the heat to moderately high. Cook the meat,
turning from time to time, until it is deeply
and evenly browned.

Stir in the
remaining ingredients, including the reserved
tamarind, and bring to the boil. Reduce the heat
to low, cover the pan and simmer for 2 to 2t
hours, or until the meat is cooked through and
tender and the sauce is thick and rather rich in
texture.

Remove from the
heat, transfer the mixture to a large, warmed
serving platter and serve at once.
