Asian Meats Recipes - Indonesian Lamb Sate Recipe

Ingredients

  • 3 garlic cloves, crushed

  • 4 Tbs. soy sauce

  • 1 Tbs. soft brown sugar

  • 1 small onion, grated

  • 1 Tbs. lemon juice

  • 1/2 tsp. salt

  • 2 lb. boned lean lamb, cubed 

Sauce:

  • 2/3 cup soy sauce

  • 1 tsp. ground coriander

  • 1 garlic clove, crushed

  • 1 green or red chili, crumbled

  • 3 Tbs. soft brown sugar

  • 2 Tbs. molasses

  • 1 Tbs. lemon juice

Serves 8


Method:

  1. Mix the garlic, soy sauce, sugar, onion, lemon juice and salt in a small bowl. Add the meat cubes and set aside to marinate for 1 hour, basting occasionally.

  2. Meanwhile, combine all the sauce ingredients in a medium saucepan. Set over moderate heat and bring to the boil, stirring constantly.

  3. Reduce the heat to low and simmer for 5 minutes. Remove from the heat and keep warm while you cook the sate.

  4. Preheat the grill (broiler) to high. Thread the cubes on to skewers and arrange on the rack of the grill (broiler). Grill (broil) for 8 minutes, turn and grill (broil) for a further 6 minutes or until the meat is cooked through.

  5. Pile the skewers on to a warmed serving platter. Pour the sauce into a small bowl and serve at once, with the kebabs.
