Asian Meats Recipes - Malaysian Spicy Beef (Rendang) Recipe
Ingredients

2lb. top round of
beef, cut into cubes

2 garlic cloves,
crushed

1 in piece of
fresh green ginger, peeled and chopped

1 green chili,
chopped

1 tsp. salt
-
2 tsp. hot chili
powder
-
1 Tbs. ground
coriander
-
1 tsp. ground
cumin
-
1 tsp. turmeric
-
1 tsp. sugar
-
2 medium onions,
chopped
-
1 stalk lemon
grass or 1 x 2in. piece of finely pared lemon
rind
-
juice of 1/2 lemon
-
2 1/2 cups thick
coconut milk
Serves 4-6
Method:

Put the beef
cubes in a large bowl. Mix the garlic, ginger,
chili and salt together and rub the mixture into
the cubes. Set aside for 30 minutes.

Combine the chili
powder, coriander, cumin, turmeric, sugar,
onions, lemon grass or rind, lemon juice and
coconut milk in a saucepan and bring to the
boil. Add the beef cubes and bring to the boil
again, stirring constantly.

Reduce the heat
to moderately low and cook uncovered, for 1 to 1
1/4 hours, or until the beef is cooked through
and tender.

Reduce the heat
to low and cook, stirring constantly, until the
meat is golden brown and all the liquid has
evaporated.

Remove from the
heat and transfer the meat to a warmed serving
dish. Serve at once.
Note: great
care must be taken during the last stage of cooking.
The heat must be carefully adjusted and the
ingredients stirred constantly or else the meat will
burn and the dish will be ruined.
