Asian Meats Recipes - Philippines Pork Adobo Recipe

Ingredients

  • 3 lb. pork chops or tenderloin, cut into large cubes

  • 8 garlic cloves, crushed

  • 1 cup wine vinegar

  • 1 1/2 cups water

  • 2 tsp. soy sauce

  • black pepper

  • 4 Tbs. vegetable oil

Serves 6


Method:

  1. Put all the ingredients except the oil into a large saucepan and bring to the boil. Cover, reduce the heat to low and simmer gently for 1 1/4 to 1 1/2 hours, or until the pork is tender.

  2. Remove the pork from the pan and set aside. Boil the liquid rapidly until it has reduced by half. Remove from the heat and keep hot.

  3. Meanwhile, heat the oil in a large frying -pan. When it is very hot, add the pork pieces and fry them until they are evenly browned.

  4. Transfer them to a serving bowl. Strain over the cooking liquid and serve at once.
