Asian Meats Recipes - Singapore Barbecued Spare Ribs Recipe

Ingredients

  • 3 lb. spareribs, cut into 2-rib serving pieces

  • salt and pepper

  • 3 Tbs. soy sauce

  • 2 Tbs. clear honey

  • 2 tsp. brown sugar

  • 3 Tbs. hoi sin sauce

  • 2 Tbs. wine vinegar

  • 1 Tbs. dry sherry

  • 1 small onion, chopped

  • 3 Tbs. chicken stock

  • 1/2 tsp. 5 spice powder

  • 14 oz. can Chinese plum sauce

Serves 6-8


Method:

  1. Rub the spareribs all over with salt and pepper and arrange them in a shallow dish. Mix all the remaining ingredients, except the plum sauce, together, and pour over the spareribs, basting them well. Set aside to marinate at room temperature for 1 hour, basting occasionally.

  2. Preheat the oven to hot 220°C (Gas Mark 7, 425°F). Remove the spareribs from the liquid and pat dry on kitchen towels. Reserve the marinating liquid.

  3. Arrange the ribs in a roasting pan and put into the oven for 30 minutes. Remove from the oven and pour off the fat. Stir in the marinating liquid, basting the ribs thoroughly and return the pan to the oven.

  4. Reduce the oven temperature to moderate 180°C (Gas Mark 4, 350°F) and roast the ribs for 1 hour, basting occasionally, or until they are golden brown and crisp.

  5. Remove from the oven, and transfer to a serving plate. Strain the cooking liquid and warm it with the plum sauce gently over low heat, stirring occasionally.

  6. Pour over the ribs and baste gently until they are thoroughly mixed. Serve at once.
