Asian Meats Recipes - Thai Galloping Horses (Mah Ho) Recipe
Ingredients

2 Tbs. peanut oil

1 garlic clove,
crushed

1 small onion,
finely chopped

12 oz. ground
pork
-
3 Tbs. roasted
peanuts, ground

3 Tbs. jaggery or
brown sugar
-
salt and pepper
-
1 fresh
pineapple, peeled, cored and
cut into rounds
-
1 dried red
chili, crumbled
-
2 Tbs. chopped
coriander leaves

Method:

Heat the ail in a
large frying-pan. When it is hat, add the garlic
and onion and fry, stirring occasionally, until
the onion is soft.

Stir in the
minced (ground) park and fry until it loses its
pinkness. Add the roasted peanuts, jaggery or
sugar and seasoning to taste.

Reduce the heat
to. law and simmer the mixture far 10 to 15
minutes, or until the park is cooked through and
the mixture is thick and dryish. Remove from the
heat.

Arrange the
pineapple rounds an a large serving platter.
Carefully spoon the mixture aver the rounds,
doming it up slightly in the middle.

Garnish with
crumbled red chili and the coriander leaves.
Serve at once.
Note: This exotically named dish is a
typically Thai mixture of the sweet and savory -
savory minced (ground) pork served on slices or
rounds of sweet fruit. Pineapple is the fruit
suggested here but more exotic oriental fruit such
as rambutans could also be used. Mah ho is usually
served as an hors d'oeuvre.
