Asian Meats Recipes - Vietnamese Beef with Bamboo Shoot  Recipe

Ingredients

  • 1/4 cup peanut oil

  • 1 lb. rump steak; cut into thin strips

  • 14 oz. can bamboo shoot, drained and cut into strips about the same size as the meat

  • 4 scallions, chopped

  • 1 garlic clove, crushed

  • 1 Tbs. fish sauce

  • salt and pepper

  • 2 Tbs. roasted sesame seeds, crushed

Serves 4


Method:

  1. Heat half the oil in a large, deep frying-pan. When it is very hot, add the beef strips and stir-fry for 2 minutes, or until they just lose their pinkness.

  2. Using a slotted spoon, transfer them to a plate and keep warm. Add the remaining oil to the frying-pan. When it is hot, add the bamboo shoot, spring onions (scallions) and garlic to the pan and stir-fry for 3 minutes.

  3. Add the fish sauce and salt and pepper to taste, stirring until they are well blended.

  4. Return the beef to the pan and stir in the sesame seeds. Continue to stir-fry for a further 1 minute, or until they are heated through.

  5. Transfer the mixture to a warmed serving dish and serve at once.
