Ingredients

tbsp vegetable oil

2 garlic cloves,
finely chopped

2 fresh red
chilies,
seeded and finely sliced

1 Chinese sausage,
finely sliced

12 fresh prawns
(shrimp), peeled
-
2 small squid, trimmed, cleaned,
skinned and sliced
-
500g/1 1/4lb
cooked rice noodles
-
30ml/2
tbsp light soy sauce
-
45ml/3
tbsp kecap manis
-
2-3 mustard green leaves, chopped
-
a handful of bean sprouts
-
2 eggs, lightly beaten
-
ground black pepper
-
fresh coriander (cilantro) leaves,
finely chopped,
to garnish
Serves 3-4
Method:

Heat a wok and add the oil. Stir in the garlic and
chilies and fry until fragrant. Add the Chinese
sausage, followed by the prawns and squid, tossing
them to mix thoroughly. Stir-fry for 3-4 minutes,
until the prawns and squid are cooked.

Toss in the noodles
and mix well. Add the soy sauce and kecap manis, and
toss in the mustard leaves and bean sprouts. Stir-fry
for 1-2 minutes, until the leaves begin to wilt.

Quickly stir in the eggs for a few seconds until
set. Season with black pepper, and spoon into heated
bowls. Garnish with coriander and serve immediately.
Note: This Chinese dish of stir-fried rice noodles and
seafood is one of the most popular items on the
hawker stalls. Breakfast, lunch, supper,
mid-morning, mid-afternoon or late evening, there's
always a bowl of these noodles to be had. Variations
include red snapper, clams and pork.
Variations: You can replace
kecap manis with the same quantity of dark soy sauce mixed
with a little sugar. If you are unable
to
locate Chinese sausage (available from Asian
stores), substitute pepperoni or use thinly
sliced pork fillet.
