Fried Noodles with Ginger

Ingredients

handful
of fresh coriander
(cilantro)

225g/8oz dried egg noodles

10ml/2 tsp
sesame oil

15ml/1 tbsp groundnut (peanut) oil
or vegetable oil

5cm/2in piece fresh
root ginger,
cut into ffne shreds

6-8 spring onions (scallions), cut into shreds

30ml/2 tbsp light soy sauce

salt and ground black
pepper

Method:

Strip the leaves from the coriander stalks. Pile
them on to a chopping board and coarsely chop them
using a cleaver or large, sharp knife.

Bring a large pan
of lightly salted water to the
boil and cook the noodles according to the
instructions on the packet.

Drain the noodles,
rinse under cold water, drain again and tip into a
bowl. Add the sesame oil and toss to coat.

Heat a wok until hot, add the groundnut or
vegetable oil and swirl it around. Add the ginger
and stir-fry for a few seconds, then add the noodles
and spring onions. Stir-fry for 3-4 minutes, until
the noodles are hot.

Drizzle over the soy sauce,
then sprinkle the chopped coriander on top of the
noodles.

Add salt and ground black pepper to taste. Toss
and serve in heated bowls.
Note: Here
is a simple noodle dish that is low in saturated fat
and would go well with most Oriental dishes. It can
also be served as a light meal for 2 or 3 people.
Variation:
If you don't like
the favor of coriander (cilantro),
use fat leaf parsley or
even
some chopped rocket (arugula).
