Noodles Recipes - Noodles with Prawns and Ham

Ingredients

30ml/2 tbsp
vegetable oil

2 garlic cloves,
sliced

5ml/1 tsp fresh root
ginger, peeled and chopped

2 fresh red
chilies, seeded and chopped

75g/3oz lean ham,
thinly sliced

1 skinless chicken breast fillet,
thinly sliced
-
16 uncooked tiger
prawns (jumbo shrimp), peeled, tails left intact and
deveined

115g/4oz green
beans, trimmed

225g/8oz/1 cup bean sprouts
-
50g/2oz
Chinese chives
-
450g/1lb egg noodles, soaked in boiling water until
tender, then drained

30ml/2 tbsp dark
soy sauce
-
15ml/1 tbsp oyster sauce
-
salt and ground
black pepper
-
5ml/1 tsp sesame oil
-
2 spring onions
(scallions), cut into strips, and fresh
coriander (cilantro) leaves, to garnish
Serves 4-6
Method:

Heat 15ml/ I tbsp of the oil in a wok or large
frying pan. When the oil is hot, fry the garlic,
ginger and chilies for 2 minutes, until aromatic.

Add the prepared ham, chicken, prawns and green
beans to the wok or frying pan.

Stir-fry the meat for about 2 minutes over high
heat or until the chicken and prawns are thoroughly
cooked. Transfer the mixture to a bowl and set
aside.

Heat
the remaining oil in the wok or frying pan. When the
oil is hot, add the bean sprouts and Chinese chives.
Stir-fry for 1-2 minutes.

Add the noodles and toss to mix. Season with soy
sauce, oyster sauce, salt and pepper. Drizzle with
sesame oil and serve in individual bowls, garnished
with spring onions and coriander.
This recipe combines prawns with ham and chicken, which may
seem unconventional until you remember that the
Spanish do something very similar in their paella.
