Noodles Recipes - Plain Noodles with Four Flavors Recipe

Ingredients

  • 4 small fresh red or green chilies

  • 60ml/4 tbsp fish sauce

  • 60ml/4 tbsp rice vinegar

  • sugar

  • mild or hot chili powder

  • 350g/12oz fresh or dried noodles

Serves 4


Method:

  1. Finely chop the chilies, and mix half of them with the fish sauce in a bowl.

  2. Mix the remaining chilies with the rice vinegar in another small bowl. Put the sugar and chili powder in separate small bowls.

  3. Cook the noodles until tender, following the instructions on the packet. Drain well, tip into a large bowl, and serve with the four flavors handed separately.

Note: A wonderfully simple way of serving noodles, this dish allows each individual diner to season their own, sprinkling over the four flavors as they like. Flavorings are always put out in little bowls whenever noodles are served.
