Prawn Noodle Salad

Ingredients

115g/4oz cellophane noodles, soaked in hot water
until soft

16 cooked peeled prawns (shrimp)

1 small green (bell) pepper, seeded and cut into
strips

1/2 cucumber, cut into strips

1
tomato, cut into strips
-
2 shallots, finely sliced
-
salt and ground black pepper
-
coriander (cilantro)
leaves,
to garnish
For the dressing:
-
15ml/1 tbsp rice vinegar
-
30ml/2
tbsp fish sauce
-
30ml/2
tbsp fresh lime juice
-
pinch
of salt
-
2.5ml/1/2
tsp fresh root ginger, grated

1 lemon grass stalk, finely chopped
-
1 fresh red
chili, seeded and finely sliced

30ml/2
tbsp mint, roughly chopped
-
few sprigs tarragon, roughly chopped
-
15ml/1 tbsp chopped chives
Serves 4
Method:

Make the dressing by combining all the ingredients
in a small bowl or jug (pitcher), whisk well.

Drain the noodles, then plunge them in a saucepan of
boiling water for 1 minute. Drain, rinse under cold
running water and drain again well.

In a large
bowl, combine the noodles with the prawns, pepper,
cucumber, tomato and shallots. Lightly season with
salt and pepper, then toss with the dressing.

Spoon the noodles on to individual plates, arranging
the prawns on top. Garnish with a few of the
coriander leaves and serve immediately.
Light and refreshing,
this salad has all the tangy flavor of the sea.
Variation:
Instead of
prawns, try squid, scallops, mussels or
crab.
