Sesame Noodles Salad

Ingredients

250g/9oz medium egg noodles
-
200g/7oz sugar snap
peas
or mangetouts
(snow peas)

2 tomatoes
-
3 spring onions (scallions)
-
2 carrots, cut into julienne
-
30ml/2 tbsp chopped
fresh
coriander (cilantro)

15ml/1 tbsp sesame seeds fresh coriander (cilantro),
to garnish
For the dressing:

10ml/2 tsp light soy sauce
-
15mll/1 tbsp toasted
sesame seed oil
-
15ml/1 tbsp vegetable oil
-
4cm/1 1/2in piece fresh
root ginger, finely grated

1 garlic clove, crushed
Serves 4
Method:

Bring a large pan of lightly salted water to the
boil. Add the egg noodles, and bring back to the
boil. Cook for 2 minutes.

Slice the sugar snap peas or mangetouts diagonally.
add to the pan and cook for a further 2 minutes.
Drain and rinse under cold running water.

Meanwhile, make the
dressing. Whisk together the soy sauce, sesame and
sunflower oils, grated fresh root ginger and crushed
garlic in a small bowl.

Cut the tomatoes in
half and scoop out the seeds with a teaspoon, then
chop roughly. Using a sharp knife, cut the spring
onions into fine shreds.

Tip the noodles and the peas or mangetouts into a large bowl and add
the carrots, tomatoes and coriander.

Pour the dressing over the top of the noodle mixture, and toss with
your hands to combine. Serve in a large salad bowl
or platter, or on individual salad plates.

Sprinkle
with the sesame seeds and top with the spring onions
and coriander.
Note:
Toasted sesame oil adds a nutty flavor to this warm Asian-style salad.
