Noodles Recipes - Soft Fried Noodles Recipe

Ingredients

  • 30ml/2 tbsp vegetable oil

  • 30ml/2 tbsp finely chopped spring onions (scallions)

  • 350g/12oz dried egg noodles, cooked and drained

  • soy sauce, to taste

  • salt and ground black pepper

Serves 4-6


Method:

  1. Heat the oil in a wok and fry the spring onions for about 30 seconds. Add the noodles and separate the strands.

  2. Fry the noodles until they are heated through, lightly browned and crisp on the outside, but still soft inside.

  3. Season with soy sauce, salt and pepper. Serve immediately.

Note: This is a great dish for times when you are feeling a little peckish and fancy something simple but satisfying. Drain the cooked noodles and ladle them into the wok a few at a time, swirling them with the onions, so they don't all clump together on contact with the hot oil.
