Noodles Recipes - Special Chow

Ingredients

450g/1lb egg noodles
-
45ml/3 tbsp vegetable oil

2 garlic cloves, sliced
-
5ml/1 tsp chopped fresh root ginger

2 fresh red
chilies, seeded and chopped

2 Chinese sausages, total weight about 75g/3oz, rinsed and sliced
(optional)

1 skinless, boneless chicken breast portion, thinly
sliced
-
16 uncooked tiger prawns
(jumbo shrimp), peeled,
tails left intact, and devined
-
115g/4oz/scant
1 cup green beans
-
225g/8oz/1 cup bean sprouts small bunch garlic chives
-
30ml/2 tbsp soy sauce
-
15ml/1 tbsp oyster sauce
-
15ml/1 tbsp sesame oil
-
salt and ground black pepper
-
2 shredded spring onions (scallions) and fresh
coriander (cilantro) leaves,
to garnish
Serves 4-6
Method:

Cook the noodles in a large pan of boiling water,
according to the instructions on the packet. Drain
well.

Heat 15ml/1 tbsp of the oil in a wok and stir-fry
the garlic, ginger and chilies for 2 minutes.

Add
the sausage slices, if using, with the chicken,
prawns and beans. Stir-fry over a high heat for 2
minutes, or until the chicken and prawns are cooked.
Transfer the mixture to a bowl and set aside.

Heat
the rest of the oil in the wok. Add the bean sprouts
and garlic chives and stir-fry for 1-2 minutes. Add
the drained noodles and toss over the heat to mix.

Season with the soy sauce, oyster sauce and salt and
pepper to taste. Return the prawn mixture to the
wok. Mix well with the noodles and toss until heated
through.

Stir in the sesame oil. Spoon into a
warmed bowl and serve, garnished with the spring
onions and coriander leaves.
Note:
A
more elaborate chow mien, this shows how extra
ingredients can be incorporated. Chinese sausages
are available from most Chinese supermarkets.
