Wheat Noodles with Stir-fried Pork

Ingredients

225g/8oz pork loin,
cut into thin strips

225g/8oz dried
wheat noodles, soaked in lukewarm water for 20
minutes
-
15ml/1 tbsp
groundnut
(peanut) oil
-
2
garlic
cloves,
finely chopped
-
2-3 spring onions (scallions), trimmed and chopped
-
45ml/3 tbsp kroeung
or magic paste
-
15ml/1 tbsp fish sauce
-
30ml/2 tbsp
unsalted roasted peanuts, finely chopped

chili oil, for
drizzling
For the marinade:
-
30ml/2 tbsp fish
sauce
-
30ml/2 tbsp soy sauce
-
15ml/1 tbsp peanut oil
-
10ml/2 tsp sugar
Serves 4
Method:

In a bowl, combine the ingredients for the marinade,
stirring constantly until the all the sugar
dissolves. Toss in the strips of pork, making sure
that they are well coated in the marinade. Put aside
for 30 minutes.

Drain the wheat noodles. Bring a
large pan of water to the boil. Drop in the noodles,
untangling them with chopsticks, if necessary. Cook
for 4-5 minutes, until tender.

Drain the noodles
thoroughly, then divide them among individual
serving bowls. Keep the noodles warm until the dish
is ready to serve.

Meanwhile, heat a wok. Add the
oil and stir-fry the garlic and spring onions, until
fragrant. Add the pork, tossing it around the wok
for 2 minutes.

Stir in the kroeung or magic paste
and fish sauce for 2 minutes - add a splash of water
if the wok gets too dry - and tip the pork on top of
the noodles. Sprinkle the peanuts over the top and
drizzle with chili oil to serve.
Note:
Dried wheat noodles, sold in straight bundles like
sticks, are versatile and robust. They keep well, so
are handy items to have in the store cupboard, ready
for quick and easy recipes like this one.
