Poultry Recipes - Barbecue Chicken Recipe

Ingredients

  • 1 chicken, cut into 8 pieces

  • lime wedges and fresh red chilies, to garnish

For the marinade:

  • bulbs from 2 lemon grass stalks, chopped

  • 2.5cm/1 in piece fresh root ginger, peeled and thinly sliced

  • 6 garlic cloves, coarsely chopped

  • 4 shallots, coarsely chopped

  • 1/2 bunch coriander (cilantro) roots, chopped

  • 15ml/1 tbsp soft light brown sugar

  • 120ml/1/2 cup coconut milk

  • 30ml/2 tbsp fish sauce

  • 30ml/2 tbsp light soy sauce

Serves 4-6


Method:

  1. Make the marinade by processing all the ingredients in a food processor until smooth. Put the chicken pieces in a dish, pour over the marinade, cover and marinate for at least 4 hours.

  2. Drain the chicken, reserving the marinade and cook over moderately hot coals for 20-30 minutes, turning and brushing with the marinade once or twice. Garnish and serve immediately.
