15ml/1 tbsp
soft light brown sugar
120ml/1/2 cup
coconut milk
30ml/2 tbsp
fish sauce
30ml/2 tbsp
light soy sauce
Serves 4-6
Method:
Make the
marinade by processing all the ingredients in a
food processor until smooth. Put the chicken
pieces in a dish, pour over the marinade, cover
and marinate for at least 4 hours.
Drain the
chicken, reserving the marinade and cook over
moderately hot coals for 20-30 minutes, turning
and brushing with the marinade once or twice.
Garnish and serve immediately.
