Poultry Recipes - Caramelized Chicken Wings

75ml/5 tbsp sugar

30ml/2 tbsp vegetable oil

25g/1oz
fresh
root
ginger, grated

two

oil, for
drizzling

mixed pickled
vegetables, to serve
Serves 2-4
Method:

Heat the sugar with 60ml/4 tbsp water in a heavy pan
until it forms a golden syrup.

Heat the oil in a wok
and stir-fry the ginger until fragrant Add the
chicken wings, brown them, then pour in the syrup
and coat the chicken.

Cover and cook for 30 minutes,
until the chicken is tender. Drizzle chili oil over
and serve with pickles.
Note: Eaten with the
fingers, these caramelized chicken wings are
irresistible.
