Poultry Recipes - Duck
and Sesame Stir-fry

Ingredients

250g/9oz skinless
wild duck breast fillets

15ml/1 tbsp sesame
oil 15mlll tbsp vegetable oil

4 garlic cloves,
finely sliced
-
2.5ml/1/2 tsp dried chili flakes
-
15ml/1 tbsp fish sauce
-
15ml/1 tbsp light soy sauce
-
1 head broccoli,
cut into small florets
-
coriander
(cilantro) sprigs and 15ml/1 tbsp toasted sesame
seeds, to
garnish
Serves 4
Method:

Cut the duck into bite size pieces. Heat the oils in
a wok or large frying pan and stir-fry the garlic
over medium heat until it is golden brown - do not
let it burn.

Add the duck pieces to the pan and
stir-fry for a further 2 minutes, until the meat
begins to brown.

Stir in the
chili flakes, fish sauce, soy sauce and
120ml/1/2 cup water.

Add the broccoli florets and continue to stir-fry
the mixture
over a medium heat for about 2 minutes, until the
duck pieces are just cooked through.

Serve immediately on warmed plates, garnished with
sprigs of coriander and sesame seeds.
Note:
This recipe is intended for game birds, as farmed
duck would usually have too much fat. If you do use
farmed duck, you should remove the skin and fat
layer, before cooking.

Tip:
Large wok
lids
are
cumbersome
and con be
difficult
to store in
a small kitchen. If you need
to cover a wok it may be easier to just
place a circle of baking parchment against
the food surface to keep cooking juices in.
