Poultry Recipes - Duck in Spicy Orange Sauce Recipe

Ingredients

  • 4 duck legs

  • 4 garlic cloves, crushed

  • 50g/2oz fresh root ginger, peeled and finely sliced

  • 2 lemon grass stalks, trimmed, cut into 3 pieces and crushed

  • 2 dried whole red chilies

  • 15ml/1 tbsp palm sugar (jaggery)

  • 5ml/1 tsp five-spice powder

  • 30ml/2 tbsp chili sambal

  • 900ml/3 3/4 cups fresh orange juice

  • sea salt and ground black pepper

  • 1 lime, cut into quarters, to serve

Serves 4


Method:

  1. Place the duck legs, skin side down, in a large heavy pan or flameproof clay pot. Cook them on both sides over a medium heat for about 10 minutes, until browned and crispy. Transfer them to a plate and set aside.

  2. Stir the garlic, ginger, lemon grass and chilies into the fat left in the pan, and cook until golden. Add the sugar, five-spice powder and chili sambal, and mix well.

  3. Stir in the orange juice and return the duck legs to the pan Cover the pan and gently cook the duck for 1-2 hours, until the meat is tender and the sauce has reduced.

  4. Skim any fat from the top of the sauce, then taste and adjust the flavoring if necessary. Serve in heated bowls with lime wedges for squeezing over the duck.
