Poultry Recipes - Fruity Duck Chop Suey Recipe

Ingredients

  • 250g/9oz fresh sesame noodles

  • 2 skinless duck breast fillets

  • 3 spring onions (scallions), cut into strips

  • 2 celery sticks, cut into strips

  • 1 fresh pineapple, peeled, cored and cut into strips

  • 300g/11oz mixed vegetables, such as carrots, peppers, bean sprouts and cabbage, shredded or cut into strips

  • 90ml/6 tbsp plum sauce

Serves 4


Method:

  1. Cook the noodles in a large pan of boiling water for 3 minutes. Drain, Slice the duck breast fillets into strips.

  2. Meanwhile, heat a wok. Add the strips of duck and stir-fry for 2-3 minutes, Drain off all but 30ml/2 tbsp of the fat. Add the spring onions and celery to the wok and stir-fry for 2 minutes more.

  3. Use a slotted spoon to remove the ingredients from the wok and set them aside in a bowl. Add the pineapple strips and mixed vegetables, and stir-fry for 2 minutes more.

  4. Add the cooked noodles and plum sauce to the wok, then replace the duck, spring onion and celery mixture.

  5. Stir-fry the duck mixture for about 2 minutes more, or until the noodles and vegetables are hot and the duck is cooked through. Serve immediately.

Note: Skinning the duck reduces the fat, but this is still an indulgent recipe. If this worries you, use less duck and more noodles. Pineapple gives the dish a lovely fresh flavor.

Cook's Tip: Fresh sesame noodles can be bought tram large supermarkets ­they are usually found in the chiller cabinets by fresh pasta.
