Poultry Recipes - Roast Lime Chicken

Ingredients

4 garlic cloves,
2 finely
chopped and 2 bruised but left
whole

small bunch
coriander (cilantro), with roots, coarsely chopped

5ml/1 tsp ground turmeric

5cm/2in piece
fresh turmeric

1 roasting chicken,
about 1.5kg/3 1/4lb

1 lime, cut in half
-
4 medium large sweet potatoes, peeled and cut
into thick wedges

300ml/1 1/4
cups chicken or vegetable stock
-
30ml/2 tbsp soy sauce
-
salt and ground black pepper
Serves 2-4
Method:

Preheat the oven to 190°C/375°F/Gas
5. Calculate the cooking time for the chicken,
allowing 20 minutes per 500g/1 1/4lb, plus 20
minutes. Using a food processor. grind the
garlic, coriander, 10ml/2 tsp
salt and turmeric to a paste.

Place the chicken
in a roasting pan and smear it with the paste.
Squeeze the lime juice over, place the lime halves
and garlic cloves in the cavity. Cover with foil and
roast in the oven.

Meanwhile, par-boil
the sweet potatoes for 10 minutes, drain and place
around the chicken. Baste and sprinkle with salt and
pepper. Replace the foil and return the chicken to
the oven.

About 20 minutes before the end of cooking, remove
the foil and baste the chicken. Turn the sweet
potatoes over.

When the chicken is cooked, drain the juices into the pan, lift it on
to a carving board, tent with foil and leave it to
rest.

Put the
sweet potatoes in a serving dish and keep them hot.
Pour away the fat from the roasting pan, but keep
the juices.

Heat on top of the stove until bubbling.
Pour in the stock. Bring to the boil, stirring
constantly, then stir in the soy sauce. Strain into
a gravy boat. Serve with the chicken and sweet
potatoes.
Note: Sweet potatoes are an
inspired addition in this spicy chicken dish.
