Poultry Recipes - Star Anise Chicken Recipe

Ingredients

  • 4 skinless chicken breast fillets

  • 2 whole star anise

  • 30ml/2 tbsp soy sauce

  • 30ml/2 tbsp vegetable oil

  • ground black pepper

Serves 4


Method:

  1. Lay the skinless chicken breast fillets side by side in a shallow, non-metallic dish and add both pieces of star anise, keeping them whole.

  2. Place the soy sauce in a small bowl. Add the oil and whisk together with a fork until the mixture emulsifies. Season to taste with black pepper to make a simple marinade.

  3. Pour the marinade over the chicken and stir to coat each breast fillet all over. Cover the dish with clear film (plastic wrap) and chill in the refrigerator for up to 8 hours. 

  4. Prepare a barbecue. Cook the chicken fillets over medium hot coals for 8-10 minutes on each side, spooning over the marinade from time to time, until the chicken is cooked through. Transfer to a platter and serve immediately.

The pungent flavor of star anise penetrates the chicken fillets and adds a wonderful aniseedy kick to the smoky flavor contributed by the barbecue. Serve the chicken with a refreshing salad.

Variation: In wetter weather; this dish can be prepared indoors. Simply place the marinaded chicken fillets under a grill (broiler) and cook, turning once, for the same amount of time.

Cook's Tip: With its aroma of liquorice, star anise is the chief component in Chinese five-spice powder: In China, the points of the star are sometimes snapped off and sucked as a breath.
