Asian Rice and Noodles Recipes - Indonesian
Rice (Nasi Goreng)
Recipe
Ingredients
-
2 cups long-grain
rice, soaked in cold water for 30 minutes and
drained

3 cups water
-
1 tsp. salt
-
2 Tbs. vegetable oil
-
3 eggs, lightly
beaten
-
1 medium onion,
finely chopped
-
2 green chilies, finely chopped
-
1 garlic clove,
crushed
-
1 lb. cooked chicken
meat, cut into thin slices
-
8oz. shrimp, shelled
and chopped
-
2 celery stalks, finely chopped
-
2 Tbs. soy sauce
Serves
6-8
Method:
-
Put the rice into a large saucepan. Pour over the
water and salt and bring to the boil. Reduce the
heat to low, cover and simmer for 15 to 20 minutes,
or until the rice is tender and the liquid absorbed.
Set aside.

Heat half the oil in a small frying-pan.
When it is hot, add the eggs and fry for 3 minutes
on each side, or until they form an omelet. Slide
the omelet on to a plate and cut into thin strips.
Set aside.

Heat the remaining oil in a large
frying-pan. When the oil is hot, add the onion,
chilies and garlic and fry, stirring occasionally,
until the onion is soft.

Add the chicken, prawns or
shrimp and celery and cook, stirring occasionally,
until they are well mixed.

Stir in the cooked rice,
soy sauce and the omelet strips and cook for 3 to 5
minutes, or until all the ingredients are warmed
through and well blended.

Transfer the mixture to a
warmed serving bowl and serve at once.
