Asian Rice and Noodles Recipes -
Indonesian Yellow Rice
Recipe
Ingredients
-
3 tbsp vegetable
oil
-
1 large onion,
finely chopped
-
2 garlic, cloves,
crushed
-
1 tbsp turmeric
-
salt and pepper
-
1 tsp finely
chopped lemon grass or grated lemon rind
-
2 2/3 cups long
grain rice, soaked in cold water for 30 minutes
and drained
-
2 1/2 cups water
-
1 1/4 cups coconut
milk
-
2 bay leaves
Garnish:
Serves 6
Method:
-
Heat the oil
in a large saucepan. When it is hot, add the
onion and garlic and fry, stirring occasionally,
until the onions is soft.

Stir in the
turmeric, seasoning to taste, lemon grass or
rind and fry for 3 minutes, stirring constantly.
Pour over the water and coconut milk and bring
to boil.

Reduce the
heat to low, add the bay leaves and cover the
pan. Simmer for 15 to 20 minutes, or until the
rice is tender and the liquid absorbed. Discard
the bay leaves.

Transfer the
rice to a warmed serving dish, shaping it into a
dome.

Garnish with
the eggs, peanuts, bananas and coriander and
serve at once.
