Asian Rice and Noodles Recipes - Malaysian Fried Rice Recipe

Ingredients

  • 2 cups long grain rice, soaked in cold water for 30 minutes and drained

  • 2 tsp. salt

  • 2 3/4 cups water

  • 1/4 cup vegetable oil

  • 2 medium onions, chopped

  • 2 red chilies, chopped

  • 1/2 tsp. blachan (dried shrimp paste)

  • 1 garlic clove, crushed

  • 2 tsp. ground coriander

  • 6oz. cooked shrimp, shelled

  • 6oz. cooked lamb or beef, sliced

  • 2 tsp. soft brown sugar, mixed with

  • 1 Tbs. molasses and 2 Tbs. soy sauce

Garnish:

  • 1 Tbs butter

  • 2 eggs, lightly beaten

  • 1/4 tsp. salt

  • 2 Tbs. vegetable oil

  • 2 red chilies, sliced

  • 2 onions, thinly sliced

  • 1/2 cucumber, peeled and diced

  • 6 scallions, sliced

Serves 6-8


Method:

  1. Put the rice, 1 teaspoon of salt and the water into a saucepan and bring to the boil. Reduce the heat to low, cover the pan and simmer for 15 to 20 minutes, or until the rice is tender and the water is absorbed.

  2. Heat the oil in a large saucepan. When it is hot, add the onions and fry, stirring occasionally, until they are golden brown. Add the chilies, blachan, garlic and coriander and fry for 5 minutes, stirring constantly.

  3. Stir in the shrimps and meat and fry for 1 to 2 minutes, or until they are well mixed with the spices. Stir in the rice, the soy sauce mixture and remaining salt. Reduce the heat to low and cook for 10 minutes, stirring occasionally.

  4. Meanwhile, prepare the garnishes. Melt the butter in a small frying-pan. Add the eggs and salt and cook until the bottom is set and lightly browned. Turn the omelet over and fry for another 2 minutes.

  5. Remove from the heat and slide the omelet on to a plate. Cut into strips and set aside. Wipe out the pan and heat the oil in it over moderately high heat.

  6. When it is hot, add the chill is and fry for 2 minutes, stirring constantly. Add the onions and fry, stirring occasionally, until they are golden brown. Remove from the heat and set aside.

  7. When the rice mixture is ready, turn it out on to a warmed serving platter. Scatter the cucumber, spring onions (scallions), fried onions, chilies and the shredded omelet on top. Serve at once.
