Asian Rice and Noodles Recipes - Philippines Fried Noodles (Pancit)
Recipe
Ingredients

450g/1 lb egg
noodles
-
1/2 kg/1 lb
shrimps, with shell
-
300ml/1 1/4
cups water
-
50g/4 tbsp
lard
-
1 large
onion, chopped
-
2 garlic
cloves, crushed
-
1 cooked
chicken breast, skinned, boned and cut into
strips
-
225g/8 oz
cooked ham, cut into strips
-
5 leaves
Chinese cabbage, shredded
-
1/4 cucumber,
chopped or sliced
-
2 tbsp soy
sauce
-
salt and
pepper
-
3 scallions,
chopped

Method:
-
Cook the egg noodles
in boiling, salted water for 5 minutes, or until
they are just tender. Drain under cold running water
and set aside.

Put the shrimps and water into a
large saucepan and bring to the boil. Reduce the
heat to low and simmer for 10 minutes. Remove from
the heat and strain and reserve about 250ml/8fl oz.
(1 cup) of the cooking liquid. Shell and devein the
shrimps and set them aside.

Melt half the lard in a
large, deep frying-pan. Add the noodles and stir-fry
for 3 minutes, or until they are evenly browned
(cook them in batches if necessary). Using tongs or
a slotted spoon, transfer the noodles to a plate and
keep warm while you cook the meat and vegetables.

Melt the remaining lard in the frying-pan. Add the
onion and garlic and fry, stirring occasionally,
until the onion is soft. Add the chicken, ham,
cabbage and cucumber and stir-fry for 3 minutes.

Stir in the shrimps, the reserved cooking liquid,
soy sauce and salt and pepper to taste. Bring the
liquid to the boil. Return the noodles to the pan
and stir-fry for a further 2 minutes, or until they
are heated through.

Transfer the mixture to a warmed serving bowl and
garnish with the spring onions (scallions) before
serving.
