Ingredients
-
vegetable oil for
deep frying
-
1 lb. rice vermicelli
-
1/4 cup peanut oil
4scallions,chopped
-
3 garlic cloves,
crushed
-
6oz. pork tenderloin,
cut into strips
-
1 chicken breast, skinned, boned and cut into strips
-
4oz. shelled shrimp,
chopped
-
1 bean curd cake,
chopped
-
1 cup bean sprouts
-
2 Tbs. sugar
-
4 Tbs. vinegar
-
4 Tbs. fish sauce
-
1 Tbs. lemon juice
-
1 Tbs. grated orange
rind
-
5 eggs, lightly beaten

Method:
-
Fill a large
deep, frying pan one, third full with the oil and heat
it until it is hot. Carefully lower the vermicelli
(straight from the packet, in batches), into the hot
oil and fry until it is golden brown.

Using a
slotted spoon, remove from the oil and drain on
kitchen towels. Keep hot while you cook the
remaining vermicelli in the same way.

Heat the
peanut oil in a deep frying-pan. When it is very
hot, add the spring onions (scallions) and garlic
and fry, stirring occasionally, until the spring
onions (scallions) are soft.

Add the meat, prawns
(shrimp), bean curd and bean sprouts and stir-fry
for 5 minutes. Add the sugar, vinegar, fish sauce,
lemon juice and orange rind and mix well.

Stir in
the eggs and cook, stirring occasionally, until they
have set.

Arrange the
vermicelli in a warmed serving bowl. Pour over
the meat mixture and garnish with
the coriander leaves and chili before serving.
