Ingredients

4 Tbs. peanut oil
-
1 large onion,
chopped
-
1 red chili, chopped
-
8oz. pork tenderloin,
cut into strips
-
8oz. frozen shrimp
-
4oz. crabmeat, shell
and cartilage removed
-
3 eggs, lightly
beaten
-
2 Tbs. fish sauce
-
4 cups cooked
long-grain rice
-
3 Tbs. tomato paste
-
6 scallions, chopped
-
2 Tbs. chopped
coriander leaves
Serves
4-6
Method:
-
Heat the oil in a
large saucepan. When it is hot, add the onion and
chili and fry, stirring occasionally, until the
onion is soft.

Add the pork strips and stir-fry for
3 minutes. Add the prawns (shrimp) and crabmeat to
the mixture and stir-fry for 2 minutes.

Break the
eggs into the centre of the mixture and quickly stir
until they are thoroughly combined.

Stir in the fish
sauce, cooked rice and tomato puree (paste) and stir-fry for 5 minutes or until the rice is
completely heated through and the mixture is
blended.

Transfer the mixture to a large warmed
serving bowl and garnish with the spring onions
(scallions) and chopped coriander leaves.
