Asian Rice and Noodles Recipes - Thai Fried Rice (Kao Pad) Recipe

Ingredients

  • 4 Tbs. peanut oil

  • 1 large onion, chopped

  • 1 red chili, chopped

  • 8oz. pork tenderloin, cut into strips

  • 8oz. frozen shrimp

  • 4oz. crabmeat, shell and cartilage removed

  • 3 eggs, lightly beaten

  • 2 Tbs. fish sauce

  • 4 cups cooked long-grain rice

  • 3 Tbs. tomato paste

  • 6 scallions, chopped

  • 2 Tbs. chopped coriander leaves

Serves 4-6


Method:

  1. Heat the oil in a large saucepan. When it is hot, add the onion and chili and fry, stirring occasionally, until the onion is soft.

  2. Add the pork strips and stir-fry for 3 minutes. Add the prawns (shrimp) and crabmeat to the mixture and stir-fry for 2 minutes.

  3. Break the eggs into the centre of the mixture and quickly stir until they are thoroughly combined.

  4. Stir in the fish sauce, cooked rice and tomato puree (paste) and stir-fry for 5 minutes or until the rice is completely heated through and the mixture is blended.

  5. Transfer the mixture to a large warmed serving bowl and garnish with the spring onions (scallions) and chopped coriander leaves.
