Vermicelli (Phat Wun Sen)
Recipe
Ingredients
-
12oz. rice vermicelli
-
1/4 cup peanut oil
-
2 garlic cloves,
crushed
-
1 red chili, chopped
-
4 scallions, chopped
-
1 pork chop, boned
and cut into, strips
-
4oz. frozen shrimp,
thawed
-
8 dried mushrooms,
soaked in cold water for 30 minutes, drained and sliced
-
2 carrots, thinly
sliced
-

Tbs. fish sauce
-
1 Tbs. cider vinegar
-
1 1/2
tsp. sugar
-
salt and pepper
-
2 Tbs. chopped
coriander leaves
Serves 4-6
Method:
-
Put the rice
vermicelli into a large bowl and just cover with
boiling water. Set aside to soak for 10 minutes,
then drain thoroughly and set aside.

Meanwhile, heat
the oil in a large saucepan. When it is hot, add the
garlic, chili and spring onions (scallions) and
stir-fry for 2 minutes. Add the pork and stir-fry
for a further 2 minutes.

Add the prawns (shrimp),
mushrooms and carrots and stir-fry for 1 minute. Add
the fish sauce, vinegar, sugar and salt and pepper
to taste and bring to the boil.

Stir in the
vermicelli and continue to stir-fry for a further 2
minutes, or until the mixture is thoroughly blended
and the vermicelli heated through.

Transfer the
mixture to a warmed serving dish and garnish with
the coriander leaves before serving.
