Vietnam Stir Fried Beef Noodles (Bun Bo) Recipe
Ingredients

1 lb.
rice vermicelli
-
1/2
cup peanut oil
-
2 lb. rump steak,
cut into strips
-
2 onions, chopped
-
1 Tbs. fish sauce
-
2/3
cup
roasted peanuts, crushed
GARNISH
-
1 small crisp
lettuce, shredded
-
1 small cucumber,
chopped
-
3 scallions
(green part only), chopped
-
1 serving nuoc
cham (refer recipe)
Serves
6-8
Method:
-
Cook the
vermicelli in boiling salted water for 5
minutes. Drain, refresh under cold water, then
keep hot while you cook the meat.
-
Heat the oil in a
large frying-pan. When it is hot, add the meat
and onions and stir-fry for 5 minutes. Stir in
the fish sauce and stir-fry for a further 1
minute.

To serve, assemble
the salad ingredients on one platter, the
vermicelli on another and the meat on a third.
Sprinkle the meat mixture with the crushed
peanuts and serve the dish with the fish sauce.
