Rice Recipes - Fragrant Coconut Rice Recipe

Ingredients

  • 1 liter/4 cups coconut milk

  • 450g/1lb/2 1/4 cups short grain rice, washed and drained

  • 1 pandanus (screwpine) leaf, tied in a loose knot

  • salt

Serves 4


Method:

  1. Heat the coconut milk in a heavy pan and stir in the rice with a little salt.

  2. Add the pandanus leaf and bring the liquid to the boil. Simmer until the liquid has been absorbed.

  3. Turn off the heat and cover with a clean dish towel and the lid. Steam for a further 15-20 minutes. Fluff it up and serve.

Note: Originally from India and Thailand, coconut rice is popular throughout Asia. Rich and nourishing, it is often served with a tangy fruit and vegetable salad, and complements some of the spicier curries from the continent. The pandanus provides the fragrance.
