Rice Recipes - Fragrant Harbour Fried Rice Recipe

Ingredients

  • about 90ml/6 tbsp vegetable oil

  • 2 eggs, beaten

  • 8 shallots, sliced

  • 115g/4oz peeled cooked prawns (shrimp)

  • 3 garlic cloves, crushed

  • 115g/4oz cooked pork, cut into thin strips

  • 4 Chinese dried mushrooms, soaked, stems removed and sliced

  • 115g/4oz Chinese sausage, cooked and slice at an angle    

  • 225g/8oz/generous 1 cup long grain rice, cooked quickly and chilled

  • 30ml/2 tbsp light soy sauce

  • 115g/4oz/1 cup frozen peas, thawed

  • 2 spring onions (scallions), shredded

  • salt and ground black pepper

  • coriander leaves, to garnish

Serves 4


Method:

  1. Heat about 15ml/1 tbsp of the oil in a frying pan, add the eggs and make an omelet. Slide the omelet out, roll it up and cut into strips. Set aside.

  2. Heat a wok, add 15ml/1 tbsp of the remaining oil and stir-fry he shallots until crisp and golden. Remove and set aside.

  3. Add the prawns and garlic to the wok, with a little more oil if needed. fry for 1 minute, then remove.

  4. Heat 15ml/1 tbsp more oil in the wok and stir-fry the pen and mushrooms for 2 minutes, add the cooked Chinese sausage slices and heat for a further 2 minutes. Lift the ingredients out of the wok and keep warm.

  5. Reheat the wok with the remaining oil and stir-fry the fried rice until it glistens. Stir in the soy sauce, salt and pepper, plus half the cooked ingredients.

  6. Add the peas and half the spring or onions and toss over the heat until the peas are cooked.

  7. Pile the fried rice on a heated platter, top with the remaining cooked ingredients and garnish with the coriander leaves.

Note: This tasty rice dish celebrates the Chinese name for Hong Kong, which is Fragrant Harbour.
