Fried Rice with Beef

Ingredients

200g/7oz beefsteak,
chilled

15ml/1 tbsp
vegetable oil

2 garlic cloves, finely chopped

1 egg
-
250g/9oz/2 1/4
cooked
jasmine rice
-
1/2 medium head
broccoli, coarsely chopped
-
30ml/2 tbsp dark soy
sauce
-
15ml/1 tbsp light soy sauce
-
5ml/1 tsp light muscovado (brown) sugar
-
15ml/1 tbsp fish
sauce ground black pepper
-
chili sauce, to serve
Serves 4
Method:

Trim
the steak
and cut into
very
thin
strips with a sharp
knife.

Heat
the oil in a wok or frying pan and cook the garlic
over a low to medium heat until golden. Do not let
it burn. Increase the heat to high, add the
steak
and stir-fry for 2 minutes.

Move the pieces of
beef to the edges of the wok or pan and
break
the egg into the centre. When the egg
starts to set, break
it up with chopsticks and then stir-fry it with the
meat.

Add the rice and
toss
all the contents of the wok together, scraping up
any residue
on the base, then
add the broccoli, soy
sauces, sugar
and fish sauce and stir-fry for 2 minutes more.

Season to taste with pepper, spoon into heated bowls
and serve immediately with chili sauce.
Note: One of the joys
of cooking
Chinese food is the ease and speed with which a
really good meal can be prepared. This delectable
beef and rice stir-fry can be on the table in 15
minutes.
Cook's Tip: Soy sauce is made from fermented soy
beans. The first extraction is sold as light soy
sauce and has a delicate. "beany" fragrance. Dark
soy sauce is more intensely favored and has
been allowed to mature for longer. The
darker kind is also traditionally used to
intensity the color of a dish.
