Fried Rice with Pork

Ingredients

tbsp vegetable oil

1 onion, chopped

15ml/1
tbsp chopped garlic

115g/4oz
tender pork, cut into
small cubes

2 eggs, beaten

500g/5 cups cooked rice
-
30ml/2 tbsp fish
sauce

15ml/1 tbsp dark soy sauce
-
2.5ml/1/2 tsp caster
(superfine) sugar
To serve:
-

spring onions (scallions), finely sliced

2 fresh red
chilies, sliced

1
lime, cut into wedges
Serves 4-6
Method:

Heat the oil in a wok or large frying pan. Add the
onion and garlic and cook for about 2 minutes until
softened.

Add the pork to the softened onion and garlic.
Stir-fry until the pork changes color and is fully
cooked.

Tip in the beaten eggs and stir-fry over
the heat until scrambled into small lumps.

Add the rice and continue to stir and toss, to
coat it with the oil and prevent it from sticking.

Add the fish sauce, soy sauce and sugar and mix
well. Continue to fry until the rice is hot.

Spoon
into warmed bowls and serve, with sliced spring
onions, chilies and lime wedges.
Note:
This is great for using up last night's leftover
rice, but for safety's sake, it must have been
cooled quickly and kept in the refrigerator, then
fried until heated all the way through.
Cook's Tips:
The rice used in this and similar stir-fries is
usually mode the
day before and added cold
to the dish.
If you like, you con drizzle sweet, sour
or hot chili dipping
sauce over the stir-fries when serving.
