Rice Recipes - Indonesia Fried Rice (Nasi Goreng)

350g/12oz/1 3/4
cups
basmati rice
(dry weight), cooked and cooled

2 eggs
-
30ml/2 tbsp water
-
105ml/7 tbsp
sunflower oil

10ml/2 tsp shrimp paste
-
2-3 fresh red chilies
-
2 garlic cloves,
crushed
-
1 onion, sliced
-
225g/8oz fillet
(tenderloin) of pork or beef, cut into
strips

115g/4oz cooked,
peeled prawns
-
225g/8oz cooked
chicken, chopped
-
30ml/2 tbsp dark
soy sauce
-
salt and ground black pepper
-
deep-fried
onions, to
serve

Method:
-
Separate the grains of the cooked rice with a fork.
Cover and
set aside. Beat the eggs with the water
and seasoning.

Heat 15ml/1 tbsp of the oil in a
frying pan or wok, pour in about half the egg
mixture and cook until set, without stirring. Roll
up the omelets, slide it on to a plate, cut into
strips and set aside. Make another omelets in the
same way.

Put the shrimp paste and half the
shredded chilies into a food processor. Add the
garlic and onion. Process to a paste.

Heat the
remaining oil in a wok. Fry the paste, without
browning,
until it gives off a spicy aroma.

Add the strips
of pork or beef
and toss the meat over
the
heat, to seal in the juices. Cook the meat in the
wok for about 2
minutes,
stirring constantly.

Add the
prawns, cook
for 2 minutes, then add the chicken,
rice, and soy sauce, with salt and pepper to taste,
stirring
constantly.

Serve
in individual bowls, garnished with omelets strips,
shredded chili and deep-fried
onions.
