Rice Recipes - Red Rice and Aduki Beans Recipe

Ingredients

  • 65g/2 1/2oz/1/3 cup dried aduki beans

  • 5ml/1 tsp salt

  • 300g/11oz/1 1/2 cups glutinous rice, washed and drained

  • 50g/2oz/1/4 cup Japanese short grain rice, washed and drained

  • 45ml/3 tbsp roasted sesame seeds mixed with 5ml/1 tsp sea salt

Serves 4


Method:

  1. Put the aduki beans in a heavy pan and pour in 450ml/1/4 pint/scant 2 cups water. Bring to the boil, then simmer, covered, for 20-30 minutes, or until the beans look swollen but are still firm. Drain, reserving the liquid in a large bowl. Add the salt. Return the beans to the pan.

  2. Bring another 450ml/scant 2 cups water to the boil. Add to the beans and boil, then simmer for 30 minutes, until the beans' skins start to crack Drain and add the liquid to the bowl of salted liquid you saved earlier. Cover the beans and leave to cool.

  3. Add the rice to the bean liquid. Leave to soak for 4-5 hours. Drain the rice and reserve the liquid. Mix the rice and beans.

  4. Bring a steamer of water to the boil. Turn off the heat. Place a tall glass in the centre of the steaming compartment.

  5. Pour the rice and beans into the steamer and gently pull the glass out. The hole in the middle will allow even distribution of the steam. Steam on high for 10 minutes.

  6. Using your fingers, sprinkle the rice mixture with the reserved liquid from the bowl. Cover again and repeat the process twice more at 10 minute intervals, then leave to steam for 15 minutes more.

  7. Remove from the heat. Leave to stand for 10 minutes, then spoon into a large bowl, sprinkle with the sesame seed mixture and serve.
