More colorful and elaborate than other fried rice
dishes, special fried rice is a meal in itself.
Variation: If you don't have any Chinese rice wine,
substitute dry sherry.
Cook's Tip: The weight of rice increases about
two and a half times after cooking. When a recipe
calls for cooked rice, use just under half the
weight in uncooked rice.
