Rice Recipes - Special Fried Rice Recipe

Ingredients

  • 50g/2oz/1/3 cup cooked peeled prawns (shrimp)

  • 3 eggs

  • 5ml/1 tsp salt

  • 2 spring onions (scallions), finely chopped

  • 60ml/4 tbsp vegetable oil

  • 115g/4oz lean pork, finely diced

  • 15ml/1 tbsp light soy sauce

  • 15ml/1 tbsp Chinese rice wine

  • 450g/1lb/6 cups cooked rice

  • 115g/4oz green peas

Serves 4


Method:

  1. Pat the prawns dry with kitchen paper. Put the eggs in a bowl with a pinch of the salt and a few pieces of spring onion. Whisk lightly.

  2. Heat half the oil in a wok. add the pork and stir-fry until golden. Add the prawns and cook for 1 minute, then add the soy sauce and rice wine.

  3. Spoon the pork and prawn mixture into a bowl and keep hot.

  4. Heat the remaining oil in the wok and lightly scramble the eggs. Add the rice and stir well with chopsticks.

  5. Add the remaining salt and spring onions, the stir-fried prawns, pork and peas. Toss well over the heat to combine and serve either hot or cold.

More colorful and elaborate than other fried rice dishes, special fried rice is a meal in itself.

Variation: If you don't have any Chinese rice wine, substitute dry sherry.

Cook's Tip: The weight of rice increases about two and a half times after cooking. When a recipe calls for cooked rice, use just under half the weight in uncooked rice.
