Asian Seafood Recipes - Cambodia Curried Shrimps and Cucumbers Recipe

Ingredients

  • 2 garlic cloves, crushed

  • 2 scallions, chopped

  • 1 1/2 in. piece of fresh green ginger, peeled arid chopped

  • 1 tsp. ground fennel

  • 2 tsp. ground coriander

  • 1/2 tsp. turmeric

  • 2 tsp. hot chili powder

  • 4 Tbs. peanut oil

  • 1 lb. shelled shrimp

  • 2 cups coconut milk

  • 1 cucumber, quartered lengthways, seeds removed and cut into thick slices

  • 2 tsp. chopped lemon grass or grated lemon rind juice of 1 lemon

  • 1 tsp. sugar

  • 1 Tbs. fish sauce

Serves 6


Method:

  1. Put the garlic, spring onions (scallions) and ginger into a blender and blend to a puree.

  2. Scrape the mixture from the blender and transfer to a mixing bowl. Stir in the ground spices.

  3. Heat the oil in a deep frying pan. When it is hot, add the spice puree and stir fry for 3 minutes. Add the prawns or shrimp and stir fry for 5 minutes.

  4. Stir in the coconut milk and bring to the boil.

  5. Reduce the heat to low, add the cucumber and remaining ingredients.

  6. Simmer gently for 5 minutes, or until the cucumber is translucent. Serve at once.
