Asian Seafood Recipes - Cambodia Curried Shrimps and
Cucumbers

Ingredients
-
2 garlic cloves,
crushed
-
2 scallions, chopped
-
1 1/2 in. piece of fresh
green ginger, peeled arid chopped
-
1 tsp. ground fennel
-
2 tsp. ground
coriander
-
1/2 tsp. turmeric
-
2 tsp. hot chili
powder
-
4 Tbs. peanut oil
-
1 lb. shelled shrimp
-
2 cups coconut milk
-
1 cucumber, quartered
lengthways, seeds
removed and cut into thick slices
-
2 tsp. chopped lemon
grass or grated lemon
rind juice of 1 lemon
-
1 tsp. sugar
-
1 Tbs. fish sauce
Serves
6
Method:
-
Put the garlic, spring onions (scallions) and ginger
into a blender and blend to a puree.
-
Scrape the
mixture from the blender and transfer to a mixing
bowl. Stir in the ground spices.

Heat the oil in a deep frying pan. When it is hot,
add the spice puree and stir fry for 3 minutes. Add
the prawns or shrimp and stir fry for 5 minutes.

Stir in the coconut milk and bring to the boil.
-
Reduce the heat to low, add the cucumber and
remaining ingredients.

Simmer gently for 5
minutes, or until the cucumber is translucent. Serve
at once.
