Asian Poultry Recipes - Indonesian Baked Spiced Fish (Ikan Bandeng) Recipe

Ingredients

  • 2 tbsp vegetable oil

  • 1 x 3 lb fish, cleaned and gutted

  • 3 garlic cloves, crushed

  • 3 in piece of each green ginger, peeled and minced

  • 3 tbsp soy sauce

  • 1 1/2 tbsp lemon juice

  • 3 tsp dried chilies or sambal ulek

Garnish:

  • 2 lemons, cut into wedges

  • 3 tbsp chopped coriander leaves

Serves 6-8


Method:

  1. Preheat the oven to fairly hot 190°C (Gas Mark 5, 375°F).

  2. Make some deep gashes across the fish with a sharp knife.

  3. Pour the oil into a roasting pan, then transfer the fish to the pan.

  4. Beat the garlic, ginger, soy sauce, lemon juice and sambal ulek together until they are well blended, then pour over the fish, rubbing the mixture into the flesh and gashes.

  5. Cover with foil then put the roasting pan into the oven.

  6. Bake the fish for 25 to 30 minutes, or until the flesh flakes easily.

  7. Remove from the oven and serve at once, garnished with lemon wedges and coriander leaves.
