Asian Seafood Recipes - Indonesian Fried Fish in Lime Juice Recipe

Ingredients

  • 1 1/4 cups lime juice

  • 1/4 cup wine vinegar

  • 1 tsp. salt

  • 6 black peppercorns

  • 2 x 2 llb. mackerel, filleted

  • 1 tsp. turmeric

  • 4 Tbs. peanut oil

Serves 6-8


Method:

  1. Combine the lime juice, vinegar, 1/2 teaspoon of salt and the peppercorns together in a large, shallow dish. Place the fish in the dish and baste well. Set aside for 1 hour, basting occasionally.

  2. Remove from the marinade and dry on kitchen towels. Remove and discard the peppercorns from the marinade and reserve about 50ml/2 fl oz. (1/4 cup).

  3. Rub the fish all over with the remaining salt and the turmeric.

  4. Heat the oil in a large frying-pan. When it is hot, add the fish fillets and fry for 5 minutes on each side, or until they flake easily. Remove from the pan and drain on kitchen towels.

  5. Transfer to a warmed serving dish. Pour over the reserved marinade and serve at once.
