Asian Seafood Recipes - Singapore Prawn in Chili Sauce Recipe

Ingredients

  • 4 Tbs. peanut oil

  • 1 lb. shelled shrimp

  • 1 garlic clove, crushed

  • 1 tin. piece of fresh green ginger, peeled and chopped

  • 2 red chilies, chopped

  • 1 green pepper, pith and seeds removed and cut into strips

  • 1 Tbs. Chinese chili sauce

  • 1 Tbs. tomato paste

  • salt and pepper

  • 2 scallions, chopped                                   .

Serves 6-8


Method:

  1. Heat the oil in a large, deep frying, pan. When it is hot, add the prawns (shrimp) and stir, fry for 5 minutes, or until they are cooked.

  2. Using a slotted spoon, transfer the prawns (shrimp) to a plate. Keep hot.

  3. Add the garlic, ginger, chilies and pepper to the pan and stir, fry for 3 minutes. Stir in the chili sauce, tomato puree (paste) and seasoning to taste and stir, fry for a further 2 minutes.

  4. Return the prawns (shrimp) to then and stir, fry for 1 minute, or until they are well blended with the sauce.

  5. Transfer to a warmed serving bowl and sprinkle over the spring onions (scallions). Serve at once.
