Asian Seafood Recipes - Singapore Prawn in Chili
Sauce

Ingredients

4 Tbs. peanut oil
-
1 lb. shelled shrimp
-
1 garlic clove,
crushed
-
1 tin. piece of fresh
green ginger, peeled and chopped
-
2 red chilies,
chopped
-
1 green pepper, pith
and seeds removed and cut into strips
-
1 Tbs. Chinese
chili
sauce
-
1 Tbs. tomato paste
-
salt and pepper
-
2 scallions, chopped

Serves
6-8
Method:
-
Heat the oil in a
large, deep frying, pan. When it is hot, add the
prawns (shrimp) and stir, fry for 5 minutes, or until
they are cooked.

Using a slotted spoon, transfer the
prawns (shrimp) to a plate. Keep hot.

Add the
garlic, ginger, chilies and pepper to the pan and
stir, fry for 3 minutes. Stir in the chili sauce,
tomato puree (paste) and seasoning to taste and
stir, fry for a further 2 minutes.

Return the prawns
(shrimp) to then and stir, fry for 1 minute, or until
they are well blended with the sauce.

Transfer to a
warmed serving bowl and sprinkle over the spring
onions (scallions). Serve at once.
