Asian Seafood Recipes - Vietnamese Fried Fish Recipe

Ingredients

  • 4 Tbs. cornstarch

  • salt and pepper

  • 4 small porgy, cleaned and with the eyes removed

  • 1/4 cup peanut oil

  • nuoc cham (refer recipe)

Serves 4


Method:

  1. Mix the corn flour (cornstarch) with salt and pepper to taste and use to coat the fish lightly.

  2. Heat the oil in a large frying-pan. When it is hot, add the fish and fry for 10 to 12 minutes, or until the flesh flakes.

  3. Serve at once, with nuoc cham.
