Sides and Salads Recipes - Broccoli with Soy Sauce Recipe

Ingredients

  • 450g/1lb broccoli

  • 15ml/1 tbsp vegetable oil

  • 2 garlic cloves, crushed

  • 30ml/2 tbsp light soy sauce

  • salt

  • fried garlic slices, to garnish

Serves 4


Method:

  1. Cut the thick stems from the broccoli, cut off any particularly woody bits, then cut the stems lengthways into thin slices.

  2. Separate the head of the broccoli into large florets. Bring a pan of lightly salted water to the boil.

  3. Add the broccoli and cook for 3-4 minutes until tender but still crisp. Tip the broccoli into a colander, drain thoroughly and arrange in a heated serving dish.

  4. Heat the oil in a small pan. Fry the garlic for 2 minutes to release the flavor, then remove it with a slotted spoon. Pour the oil carefully over the broccoli, taking care as it will splatter.

  5. Drizzle the soy sauce over the broccoli, sprinkle over the fried garlic and serve.
