green beans

15ml/1 tbsp vegetable oil

3 garlic cloves, finely chopped

spring onions (scallions), cut into 2.5cm/1 in
lengths

25g/1oz dried shrimps, soaked in warm water and
drained

15ml/1 tbsp light soy sauce salt
Serves 4
Method:

Trim the green beans. Cut each green bean in half.

Bring a pan of lightly salted water to the boil
and cook the beans for 3-4 minutes until tender but
still crisp. Drain, refresh under cold water and
drain again.

Heat the oil in a non-stick frying
pan or wok until very hot Stir-fry the garlic and
spring onions for 30 seconds, then add the shrimps.
Mix lightly.

Add the green beans and soy sauce. Toss the
mixture over the heat until the beans are hot. Serve
immediately.
The smoky flavor of the dried shrimps used in this
recipe adds an extra dimension to green beans cooked
in this way.
Variation:
For
more color and a contrast in texture, stir-fry
sliced red, yellow or orange (bell) peppers
in the wok and cook for a few minutes until just
tender but still crunch. Add the garlic and spring
onions and proceed as above.
Cook's Tip: Don't be tempted to use too
many dried shrimps. Their flavor is very strong and
could overwhelm the more delicate taste
of the green beans.
