Asian Soups Recipes - Burma Mixed Vegetable Soup (Hincho) Recipe

Ingredients

  • 5 cups stock

  • 2 garlic cloves, crushed

  • 1 large onion, finely chopped

  • 2 Tbs dried shrimp or 3 shelled fresh shrimp

  • 2 tsp blachan (dried shrimp paste)

  • 1/2 small Chinese cabbage, shredded

  • 2 zucchini, thinly sliced

  • 1 1/3 cups cubed pumpkin flesh

  • pepper and salt

Serves 6-8


Method:

  1. Put the stock, garlic, onion, dried prawns or shrimp and blachan into a saucepan and bring to the boil.

  2. Add the remaining vegetables, adding those which take longest to cook first, and simmer until all are cooked through (about 5 minutes in all).

  3. Adjust seasoning and serve at once.

Note: The selection of vegetables given below is optional; any green vegetable, such as cauliflower, okra or cucumber could be added.
