Asian Soups Recipes - Burma Mixed Vegetable Soup (Hincho)

Ingredients

5 cups stock

2 garlic cloves,
crushed

1 large onion, finely
chopped

2 Tbs dried shrimp
or 3 shelled fresh shrimp

2 tsp blachan (dried
shrimp paste)

1/2 small Chinese
cabbage, shredded

2 zucchini, thinly
sliced

1/3 cups cubed pumpkin
flesh

pepper and salt
Serves
6-8
Method:

Put the stock,
garlic, onion, dried prawns or shrimp and blachan into a saucepan and bring to the boil.

Add the
remaining vegetables, adding those which take longest
to cook first, and simmer until all are cooked
through (about 5 minutes in all).

Adjust seasoning
and serve at once.
Note: The selection of
vegetables given below is optional; any
green vegetable, such as cauliflower, okra or
cucumber could be added.
