Ingredients

400g/14oz tin
tomatoes
-
2 onions, finely chopped
-
1 large sweet potato,
peeled and cut into cubes
-
225g/8oz spinach,
chopped
-
1 Tbs tamarind pulp
(optional)
-
5 cups water
-
salt and pepper
-
1/2kg/1 lb firm white fish fillets, chopped

Method:
-
Put the tomatoes and
liquid, onions, vegetables and tamarind into a large
saucepan.
-
Pour over the water and seasoning to taste
and bring to the boil.
-
Reduce the heat to low and
simmer for 15 minutes.
-
Stir in the fish fillets and
simmer for a further 15 to 20 minutes, or until the
fish flakes easily.
-
Serve at once.
