Asian Soups Recipes - Philippines Fish Soup (Sinigang) Recipe

Ingredients

  • 400g/14oz tin tomatoes

  • 2 onions, finely chopped

  • 1 large sweet potato, peeled and cut into cubes

  • 225g/8oz spinach, chopped

  • 1 Tbs tamarind pulp (optional)

  • 5 cups water

  • salt and pepper

  • 1/2kg/1 lb firm white fish fillets, chopped

Serves 6


Method:

  1. Put the tomatoes and liquid, onions, vegetables and tamarind into a large saucepan.

  2. Pour over the water and seasoning to taste and bring to the boil.

  3. Reduce the heat to low and simmer for 15 minutes.

  4. Stir in the fish fillets and simmer for a further 15 to 20 minutes, or until the fish flakes easily.

  5. Serve at once.
